I did a 3 lb piece of meat I got at Stew's on sale for $3.99 a lb....figured, why not try it!<br />
The ingredients are pretty straight forward and most of them you probably have in your kitchen already. Total cooking time was a little over an hour. Considering basic pot roast can take hours either on the stove or in a slow cooker, that's a pretty impressive time! It came out, juicy and tender, shredded with ease.<br />

The first thing you should do is turn your IP on saute and add a few tbsp of olive oil. Then season all sides of your meat with some kosher salt and sear it on all sides; about 6 mins or so each side. Take out of IP and onto a plate and put aside for later.<br />

Next you want to add a bit more oil, then your small diced onions and give it a stir for a few minutes. Next add your cut carrots, some thyme, garlic, salt, fresh pepper, and let it saute for a few more minutes. Deglaze with some red wine, followed by a few tbsp of Worcestershire sauce and your beef broth.<br />

Put your top on, lock the lid and be sure the pressure release valve is closed. Hit manual then 60 and let it go. After it cooks let it naturally release for about 10 mins, then do a quick release for the remaining pressure.<br />

it comes out smelling amazing, and is super tender. Remove the meat and the carrots from the IP, and turn the IP to saute. This is where you will add your corn starch slurry to thicken the remaining juices.<br />
While the gravy is cooking you can begin to shred your meat, you only need 2 forks and little effort.<br />

Refrigerate, turning the chicken pieces occasionally, for at least 2 hours and up to 1 day.<br style="outline: 0px;" /><br style="outline: 0px;" />Preheat the oven to 400 degrees. Remove chicken from the bag and arrange the chicken pieces on a large greased baking dish. Roast until the chicken is just cooked through, about 1 hour. If your chicken browns too quickly, cover it with foil for the remaining cooking time. Transfer the chicken to a serving platter. Place the baking dish on a burner over medium-low heat. Whisk the chicken broth into the pan drippings, scraping up any browned bits on the bottom of the baking sheet with a wooden spoon and mixing them into the broth and pan drippings. Drizzle the pan drippings over the chicken. Sprinkle the parsley over the chicken, and serve. I used Trader Joes multi grain medly which I simply sautéed with olive oil and garlic. More salads, more fish, not so many carbs...smaller meals, water water water!!! I've just always eaten this way, and it makes me feel great doing it. It is hard though to eat healthy on a budget. Everyone knows that. I always look for sales and deals when it comes to fish, but its hard to get to the store sometimes to get the fresh deal of the day!! One thing I've been doing lately is buying frozen fish. Obviously fresh is best, but one thing I do enjoy is Trader Joe's frozen salmon burgers. You get 4 in a pack and I can't remember off hand, but they were around 5 bucks. I think that's a good deal! Throw them in your freezer, and when you feel like a little fish, they take minutes to prepare, no thawing required.<br />

1 oz goat cheese (I like Trader Joe's Honey Goat Cheese)</div>

your favorite vinaigrette or make your own like I did</div>

Take a cast iron skillet and heat on medium high. Add a few tsp of neutral high heat oil, I used avocado oil. Once the oil heats up season your salmon with salt and pepper and toss in pan, about 3 minutes per side. Once you flip it, squeeze some lemon juice on top, and add a little garlic to the pan. This just give it a bit more flavor.</div>

While your salmon is cooking, add your greens to a bowl, slice up some avocado, chunk up the goat cheese, toast the slivered almonds and make your vinaigrette. Once your salmon is cooked, let it rest for a minute then chunk it up and top off your gorgeous salad with it, and drizzle your dressing all over. DONE!</div>

I was walking around Whole Foods, and came across it. I instantly thought of making some sort of Mexican dish with it. Sorta like a deconstructed taco. I also am trying to make more recipes using the slow cooker, so shredded chicken seemed like a good option for this.<br />
<br />
You will need:<br />
1 package of black bean spaghetti<br />
4-5 boneless skinless chicken breasts<br />
1 jar of your favorite salsa<br />
1 can of corn, drained<br />
1 cup shredded cheddar cheese<br />
sour cream<br />
hot sauce!<br />

in your slow cooker, place the chicken breasts in the bottom, in an even layer. Season with salt pepper and any other spices you may want to include like garlic powder or maybe a little chili powder. Pour the salsa over the chicken and using the back of a spoon be sure all of the chicken is covered. Close your slow cooker and cook on low for 4 hours or high for 2. When chicken is cooked, using 2 forks, shred all the chicken and stir in the corn and season to taste. Let cook another 10 mins to incorporate the flavors and to heat up the corn.<br />
<br />
Bring a pot of water to boil, and add the black bean spaghetti, stir and lower the heat and cook for 8 minutes. Drain and rinse with cold water.<br />
<br />
Heat a saute pan over medium heat add a few tbsp of a neutral oil add the shredded chicken and the black bean spaghetti and using tongs toss to combine. Add some of the shredded cheddar and continue to toss until the cheese begins to melt and it is all heated through.<br />
<br />
Serve in a bowl, topped with more shredded cheddar, sour cream and hot sauce.<br />

Baby bok choy is delicious. Period. its one of those veggies that has tons of phytonutrients, minerals, vitamins, antioxidants but its very low in calories. It tastes so good sauteed and steamed, on its own or in a soup like this recipe.<br />
<br />
You will need:<br />
<br />
2 bunches of baby bok choy, trimmed, cut in quarters, and cleaned well<br />
1 package of rice noodles (i used Trader Joe's)<br />
about a cup of vegetable broth (or chicken)<br />
1 serving of steamed chicken.<br />
1-2 teaspoons of HOT sesame oil<br />
1-2 teaspoons of a neutral oil (i used canola)<br />
a pinch or 3 of red pepper flakes<br />
small piece of ginger<br />
1 clove of garlic<br />
1 tablespoon of toasted sesame seeds for garnish<br />
<br />
bring a small pot of water to a boil, and add a bit of salt<br />
<br />
Next, add the 2 oils to a COLD saute pan. Then add your garlic and ginger. THEN turn the heat on medium. Cook your ginger and garlic til they are sizzling! The reason you do this starting cold, is it infuse the oil with the flavors, and since garlic and ginger burn easily you start it cold and bring the temp up so the flavors come out.<br />

Next add the bok choy and using tongs toss the oils, let saute for about 2 mins.<br />
Add the broth and cover for 1-2 mins, allowing the bok choy some time to wilt.<br />
Then add the chicken.<br />
When you add the chicken, you want to add the rice noodles to the boiling pot of water. The noodles only take about 1 1/2-2 mins (i buy the fresh ones)<br />

I don't know about you, but the SMELL of freshly baked bread is so amazing! The taste is even better.<br />
I decided to put my bread maker to good use. I've only used it a handful of times as long as I've had it. My husband is a big bread eater...he will eat bread with every meal. For some reason lately i keep forgetting to buy bread at the store. The other day I figured I had the time, why not make some! Not that I need a lot of time with a bread maker!! You LITERALLY add the ingredients (wet on the bottom then the dry topped off with the yeast) and push a button. That's it. it will knead, punch, rest, rise, and bake all on its own! Even shuts its self off when completed! Simple easy healthier than store bread (no sugar added, unless you are making the honey wheat, then just a few teaspoons of honey) I made this recipe twice in 24 hours, changing just a few minor things.<br />

The bread came out warm and tasted great with just some butter, but also slightly rustic on a sandwich One thing that's important is to leave the bread to cool, although tempting, it is all part of the process to make an excellent loaf. </span><br />

I know I've been absent. To be honest I really didn't cook much this year. I was pregnant and not interested in cooking. I did however keep reading about food and recipes etc and have so much in store for my blog! I can't wait! Things are in the works now as we speak!<br />

It sounded really good, so I threw a bag into my cart. So here's the recipe, with my changes.<br />

1 bag of broccoli slaw<br />
3/4 lb of ground turkey or beef (i used 1lb of ground chicken)<br />
1/2 cup chopped parsley ( i didn't have any)<br />
5tsp grated Parmesan cheese<br />
2tsp garlic powder ( I used more of course!)<br />
1 1/2 tsp dry Italian seasoning<br />
2 tsp garlic salt (i ran out so I increased the garlic powder and added some salt and pepper)<br />
2 eggs<br />
(i also added some basil and red pepper flakes to add some spice)<br />

Preheat oven to 350 degrees<br />
<br />
Microwaved the broccoli slaw for 4 mins (it came in a steam bag)<br />
open the bag up and let it cool. Do not add the HOT broccoli to the meat!! Be sure its cooled down!!<br />

Spray a baking sheet with cooking spray. Use a standard ice cream scoop and make 12 meatballs. ( I used a smaller scoop and made 25)<br />

This is SUCH a good recipe!! It was flavorful and colorful!!! I think its a good way to incorporate veggies for those picky kids!! You can make your standard spaghetti and meatball dinner or you could make some mashed potatoes and gravy for something a bit different. These can be added to soup or just eaten on their own!! I'm definitely going to make these again and again!<br />

I did a bit of research on different recipes for this one. I was looking at an America's Test Kitchen recipe, which was more rustic and had few ingredients. Then i was looking at an recipe which had creme fresh, and bouquets of spices and all these crazy steps. To me, Soup should be simple. Throw a few ingredients in a pot, add some stock, let simmer and SERVE! SO i kinda decided to make my own version using a little bit from both recipes. One recipe called for 2 strips of bacon, all I had on hand was smoked turkey sausages with cheddar! I think it worked well!! Bare with me, I didn't write down exact measurements!!!</div>

Next, add your garlic, and cook for 30 seconds. Deglaze with white wine. Let the wine cook out for about 1-2 minutes.</div>

I had some Jamaican Jerk Seasoning in my pantry and added a few other spices to make it "blackened". It had some sweet, salty, garlicky, and some spice to it. I squeezed some fresh lemon juice over the fish right when it was done cooking to give it that extra kick of flavor. There is nothing better than flaky fish with the taste of lemon on it.</div><div class="separator" style="clear: both; text-align: left;"><br />

</div><div class="separator" style="clear: both; text-align: left;">Lay your tilapia fillets out and sprinkle half of the spice mixture on the, then flip over and season the other side with the remaining seasoning. </div><div class="separator" style="clear: both; text-align: left;"><br />

</div><div class="separator" style="clear: both; text-align: left;">Heat a non-stick pan on medium high and add a few tbsp of olive oil. Add the tilapia and cook for about 3-4 mins, then flip over and cook again until cooked all the way through. </div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">In the mean time, heat a small pan on med, drizzle a bit of olive oil in the pan, the saute one chopped clove of garlic. Add the shredded zucchini, some kosher salt, pepper, red pepper flakes, and a bit of garlic powder. Saute for a few minutes stirring often. Once the zucchini is heated through add the lemon zest, lemon juice, a pat of butter and a bit more salt and pepper to taste.</div><div class="separator" style="clear: both; text-align: left;"><br />

</div><div class="mobile-photo">I added my rice and water along with some nice Mexican seasonings, like cumin, garlic, cilantro, chipotle in with the rice. It will just give it a nice flavor base I can add to later.</div><div class="mobile-photo"><br />
</div><div class="mobile-photo">Cube the zucchini and squash and sprinkle with some kosher salt. Let it sit in a colander for a little while to remove some of the moisture.</div><div class="mobile-photo"><br />
</div><div class="mobile-photo">In a saute pan, add some olive oil and your chopped up onion, saute til the onion becomes translucent and soft, add a few cloves of chopped garlic.</div><div class="mobile-photo"><br />

You don't want to cook the squash for along time because you will end up with a pan of mush. Chop up your jalapeno and add to your mixture. Mix in your brown rice. They grow organic produce year round, and you have the option to pre-pay per season for about 10 weeks worth of fresh produce and you pick it up weekly. </div><div class="separator" style="clear: both; text-align: left;">I decided to purchase a container of English Peas, and some yellow squash and zucchini. I've never cooked with English peas before. They said to steam them for a few minutes and season. I thought there must be another way to enjoy these fresh peas. I thought about how they are similar to edamame, where you eat the insides, not the outer shell...and I though how nice it would be to have the simplicity of cooking my entire dinner on the grill tonight. So I decided to experiment...hoping it would come out nice, if not I was going to be sad that I wasted these amazing peas.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;">What you need:</div><div class="separator" style="clear: both; text-align: left;"><br />
