Baby Bok Choy Noodle Bowl

Baby bok choy is delicious. Period. its one of those veggies that has tons of phytonutrients, minerals, vitamins, antioxidants but its very low in calories. It tastes so good sauteed and steamed, on its own or in a soup like this recipe.

You will need:

2 bunches of baby bok choy, trimmed, cut in quarters, and cleaned well
1 package of rice noodles (i used Trader Joe's)
about a cup of vegetable broth (or chicken)
1 serving of steamed chicken.
1-2 teaspoons of HOT sesame oil
1-2 teaspoons of a neutral oil (i used canola)
a pinch or 3 of red pepper flakes
small piece of ginger
1 clove of garlic
1 tablespoon of toasted sesame seeds for garnish

bring a small pot of water to a boil, and add a bit of salt

Next, add the 2 oils to a COLD saute pan. Then add your garlic and ginger. THEN turn the heat on medium. Cook your ginger and garlic til they are sizzling! The reason you do this starting cold, is it infuse the oil with the flavors, and since garlic and ginger burn easily you start it cold and bring the temp up so the flavors come out.

Next add the bok choy and using tongs toss the oils, let saute for about 2 mins.
Add the broth and cover for 1-2 mins, allowing the bok choy some time to wilt.
Then add the chicken.
When you add the chicken, you want to add the rice noodles to the boiling pot of water. The noodles only take about 1 1/2-2 mins (i buy the fresh ones)

pout the noodles in to a colander and run cold water over them. This prevents them from sticking.
Add the noodles to the pan and toss to combine.

Pour it all into a big noodle bowl and garnish with the toasted sesame seeds.

Enjoy!

Excelent work, good explanation.
Your article helped me to think out of the box in which we all are bounded. I am really feeling proud to have bloggers like you in the internet. If you do not mind I also want to share my view on food habit and safety. Now a days we are consuming conventionally grown food items that is not good for health but its result is not visible in sort time so people are not noticing it. But now it right time to include organic food items like organic masoor whole dal soup in your diet.
