Lemon Artichoke sauce over egg noodles with baked chicken pieces

2 TBSP olive oil
3 gloves garlic minced
1 can quartered artichoke hearts (drained)
1 lemon zested and juiced
fresh grated Parmesan cheese
1 cup fresh basil chopped
3/4 cup pasta water
s+p to taste

2 cups egg noodles cooked and drained

1 package of chicken pieces (breasts thighs legs combo on the bone)

ok so preheat your oven to 400 degrees
season chicken with salt pepper olive oil and garlic powder
place in a baking dish skin side up and roast for 30 minutes, then reduce the heat to 350 for another 20-30 minutes until cooked through.

Bring a pot of salted water to a boil and add the egg noodles bring back to a boil and cook for 10-12 mins stirring every now and then. Drain and keep to the side (don't forget to reserve some of the water for the artichoke sauce!)

while this is going on....get a nice sized pan preheat it then add the olive oil and garlic and saute for a few mins...add the chopped artichokes and lemon zest and lemon juice, then add the chopped basil and Parmesan cheese...take some of the water from the egg noodles and add it to the artichokes to make a nice saucy sauce.let it cook for a few minutes...season with salt and pepper. add the cooked egg noodles and toss lightly.

when the chicken is cooked you can add it to the sauce and noodle and present in the pan!

the sauce is super quick to put together so you can chop and prepare all your ingredients while your chicken cooks...then when you have like 15 minutes left...you put it all together!!
