Simple Fish Tacos
I made some pretty tasty fish tacos the other night, and once the prep was done, its was super quick and easy to grill!
You will need:
1 lb tilapia cut into 1 inch strips
corn tortillas
olive oil
salt + pepper
lime juice + zest from 1 lime
and one lime cut in segments for garnish
1 avocado cubed
1/2 cup (low fat) sour cream
pinch of cayenne pepper
fresh cilantro chopped
shredded red cabbage
preheat your grill to medium heat (or you can broil the fish)
prepare your tilapia on heavy duty foil...or just double up the regular stuff
lay the tilapia on the foil, add some olive oil, salt and pepper
set a side
in a small bowl combine sour cream, cayenne pepper, salt, cilantro and juice and zest of half the lime
set aside
in another bowl add the shredded red cabbage, olive oil, the remaining lime juice toss to coat
put the fish and foil on the grill and cook until white and flaky...maybe 10 minutes, depending on the thickness of your fish.
when you have about a minute left, put the corn tortillas on the grill and flip over every 30 seconds until they are warmed up and have grill marks on them.
get all your ingredients and start making your tacos!!
lay the cor tortilla on a plate, add a few pieces of fish, then the cabbage, then the avocado cubes, top with the sour cream mixture. squeeze some fresh lime juice on top, sprinkle some cilantro, fold like a taco and EAT UP!!
you can serve this with a simple side salad, or rice.
It's a very filling dish!
