"LC" salad (light + crunchy)

This accompanies any pasta dish, but with the addition of the grilled chicken it can also be a light and healthy meal.

You will need the following:

1 bag of mixed greens
Fresh mozzarella balls (bite sized)
1 avocado (sliced or cubed)
Fresh basil leaves (torn into pieces)
4 pieces grilled chicken (cut into slices)
1 ½ TBSP Olive oil
2 TBSP Balsamic vinegar
Fresh ground pepper
1 clove of garlic
TBSP honey
A squirt of mayo
Pinch of salt (if needed)

Salad:
Put the lettuce into a large serving bowl.
Scatter the mozzarella avocado and fresh basil on top of the lettuce.
Place the grilled chicken pieces on top of the salad.

Dressing:
In a small bowl add the minced garlic, honey, olive oil and balsamic whisk until combined, and then add the squirt of mayo, whisk again.
Add fresh ground pepper and salt to taste.
Pour over salad and gently toss.
Serve immediately
