Chipotle Tilapia with Avocado Salad



 WHOA MAMA!! My mouth is still burning from this one!!
I added a bit too much chipotle peppers...but it was a GOOD PAIN!!

you need:

1 lb tilapia
1 bunch of cilantro chopped fine
1 tablespoon water
1 tablespoon olive oil
1 tablespoon chipotle in adobo chopped
1/2 teaspoon cumin
salt + pepper
1 clove garlic chopped fine

set your oven to broil
cover a pan with foil
spray with a bit of non stick stuff
lay the tilapia out on the tray in one layer

in a bowl combine all ingredients (except the tilapia duh!)
mix well with a fork

spread evenly over all the tilapia

broil 3"-4" away for about 6-8 minutes

serve with avocado salad...or whatever you'd like!

Avocado salad:

you need:

juice form half a lemon
2 tablespoons oil
1 tablespoon Dijon mustard
1 tablespoon balsamic vinegar
salt + pepper

bed of tender greens
1 ripe avocado cut in cubes
1/2 red pepper cut into small pieces
handful of walnut pieces
whatever other stuff you want in your salad...you could add cheese, croutons, etc

combine first 5 ingredients in a bowl, whisk til creamy

arrange salad stuff on your plates, drizzle dressing over it.
Serve Tilapia next to it and ENJOY!!
