Eggs over Sweet Potato Hash

So I'm in the process of cleaning out my fridge, freezer and pantry, using up all the things that need to be used up! I wasn't in the mood for a BIG crazy meal with all the dishes to wash afterward so I went with a  brunch kind of dinner.



You need:

  • a sweet potato or 2...I used a big one but I recently was on this blog and learned that smaller sweet potatoes actually are SWEETER! so get a few small ones...figure one per portion/person.
  • some Olive Oil...enough to saute the sweet potatoes and to caramelize your onion
  • 1 large red onion,diced
  • salt + pepper
  • 1 tbsp sweet chili sauce
  • 3-4 eggs...depending on how many you want to eat per portion, i had one my husband had 2

First you must caramelize your onion because it takes about an hour...

Once your onions are caramelized, set them aside and in the same pan (don't clean out all the goodness that's left behind!!) add a bit of olive oil, then the sweet potatoes and saute them until they are starting to brown.

At this point push the potatoes to the sides of the pan and add the sweet chili sauce, then mix the potatoes in with it. This gives the sauce a second to warm up and thin out which coats the potatoes easier.
Add the caramelized onion and mix to incorporate, set aside.

Then put these great potatoes aside and fry up your eggs. I recommend making them over medium...so you have some yummy yolk to pop over your potatoes...YUM!

Pile the potato onion mixture on your plates then top with the eggs. I added some bacon strips on the side.
 This is an amazingly flavorful recipe, and something just a bit different. You could always add some hot sauce, red pepper flakes or even chipotle powder to spice it up!
