Asian Salmon Patties w/ Sesame Mayo +Chinese Noodles w/ Sesame Dressing

This recipe is so fast to make! I prepared it this afternoon, and when i was hungry it only took about 15 minutes to cook and put together. I found this recipe in the Everyday Food-Fresh Flavor Fast cookbook. It serves 4 and takes a total of 45 minutes to make.





What you need for the salmon patties:

1 1/2 lbs skinless salmon fillet, finely chopped
2 shallots, minced
2 TBSP fresh ginger, finely grated
1 lg egg, slightly beaten
1/4 tsp crushed red pepper flakes
coarse salt and fresh pepper
lime wedges for serving
Sesame mayo (see recipe below)
Chinese noodles w sesame dressing (see recipe below)

What to do:
in a large bowl combine all ingredients except lime. Mix by hand and form into 8 equal patties, about 1 inch thick, packing each firmly; transfer to a plate. freeze until just firm, about 20 minutes.

Heat a large non-stick skillet over medium-high heat. Cook salmon patties (working in batches if needed)until browned on both sides and just opaque throughout, 4-6 minutes per side. Serve with lime wedges, sesame mayo and Chinese noodles with sesame dressing.

What you need for sesame mayo:
1/3 cup mayo
2 scallions, trimmed and thinly sliced
2 TBSP fresh lime juice
1 tsp toasted sesame oil

In a small bowl, stir together mayonnaise, scallions, lime juice, and sesame oil. Cover and chill until ready to use or store for up to 3 days

serves 4

What you need for Chinese noodles with sesame dressing:

8 oz thin chinese noodles (i used thin spaghetti)
1 TBSP vegetable oil
1/4 cup fresh lime juice (from about 2-3 limes)
2 TBSP soy sauce ( i used low sodium)
1 tsp toasted sesame oil
2 tsp light brown sugar
1/8 tsp crushed red peeper flakes
3 TBSP corsely chopped cilantro
coarse salt + pepper

 In a large pot of boiling water, cook noodles according to package instructions. Drain; rinse under cold water until completely cool. Set aside.

In a large bowl, combine lime juice, soy sauce, sesame oil, sugar, red pepper, and cilantro. Add noodles; toss to combine. Season with salt and ground pepper, and serve.

giada de laurentis also has a wonderful recipe for salmon cakes that a made for jay a couple of months ago.. you should try it, Jay loved it and he isn't really a big seafood guy
