Creamy Roasted Garlic Hummus

I love hummus...its a healthy snack, and there are so may varieties you can't get bored with it!

you can buy hummus from your local grocery store, or if you live in Stamford, CT you could go to Tabouli Grill, but sometimes its fun to make your own! Then you can really play with all the ingredients and make it how you like!

you will need:

1-15 oz can of chickpeas, drained
juice of 1 lemon (or 2)
1/4-1/3 cup tahini
about 2-4 tablespoons of olive oil
a few tablespoons of water
roasted garlic cloves (between 2-5 depending on how garlicky you want it!)
salt and pepper

so first off do you know how to roast garlic?
get some foil, preheat your oven to 400 degrees
peel off all loose skin from the garlic, then cut off the top of the garlic head
place it in the middle of some heavy duty foil
drizzle with olive oil
twist the foil over the garlic so its closed, ad pop in the oven for about 20 minutes or until soft
let cool slightly so you can handle the garlic and squeeze out the goodness...you can also use this for spreading on bread or adding to sauces or as my husband likes to do..eat it straight out of the foil!! mm mm garlic breath!!!! ha ha

so there is a trick to making good creamy hummus...you don't just throw it all in a blender and blend!
first things to do is combine the tahini and lemon juice blend until smooth
then add the garlic and salt, blend again
next add the chick peas 1/3 at a time, blending after each addition,
finally add the olive oil and water, and blend til it is the right consistency, taste and add more salt or lemon juice to taste.

you can get pita chips, carrots, and dip away, or add it to your sandwich instead of mayo or mustard!
Play with ingredients, add some jalapenos, or roasted red peppers, or even some pine nuts!
