Grilled Pork Cutlets with Lemon-Garlic Sauce

This was such a simple and fast recipe! I was very happy with the results. The pork was moist and tender, the lemon juice and parsley gave it a fresh flavor. They suggest avoiding hot paprika, as it will overwhelm the cutlets.



What you need:
1/4 cup extra-virgin olive oil
2 teaspoons paprika
1 teaspoon sugar
1/4 teaspoon red pepper flakes
6 garlic cloves, sliced thin
3 tablespoons lemon juice
2 tablespoons finely chopped fresh parsley
salt and pepper
8 thin cut boneless pork cutlets (about 1 1/2 lbs)

What to do:

  1. Combine oil, paprika, sugar, red pepper flakes, and garlic in a bowl and microwave until bubbling about 1 minute. Reserve 2 tablespoons of the garlic oil, then whisk lemon juice and parsley into remaining oil mixture and season with salt and pepper.
  2. Pat cutlets dry with paper towels and season with salt and pepper. Rub cutlets all over with reserved garlic oil. Grill pork over hot fire (medium heat) until lightly charred on first side, about 2 minutes. Flip cutlets and grill until just cooked through, about 1 minute longer. Transfer to a platter, tent with foil, and let rest for about 5 minutes. Drizzle with sauce. Serve.
 I decided to make grilled zucchini with this dish. It was a great accompaniment, with the pork, because the zucchini was nice and juicy and i added lemon zest so it highlighted the lemon in the sauce.

I am happy with the results. This was very inexpensive and very quick to make, about 10 minutes prep time and about 10 minutes cooking, that including the zucchini.
